Scrappin & Old Fashioned Soft Pumpkin Cookies......

Last night I went to Green Tangerines
to crop with the lovely staff ladies and some of the wonderful Design Team ladies. It started at 9pm. And leaving my house to go there I was tired! Somehow I managed to make it- and did not get home until 2:30am. Must have been the AWESOME company! I got a lot done- working on my Christmas cards. It was fun to chat and get to know my Design Team friends better too! We were suppose to bring along something to nibble on. I brought these!
Makes about 3 dozen
Bake at 350

2 1/2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 cup butter softened
1 1/2 cups sugar
1 cup solid pack pumpkin (I used Libby's)
1 egg
1 tsp. vanilla extract

In a large mixer bowl, cream butter and sugar. Add pumpkin, egg, and vanilla; beat until light and creamy. Add dry ingredients; mix well. Use your cookie scoop to drop onto cookie sheet. Bake for 15-20 minutes. Cool completely on wire racks. Drizzle with glaze when cool.

Glaze:
2 cups powdered sugar
3 tbsp. milk
1 tbsp. melted butter
1 tsp. vanilla
Blend until smooth
I pour into freezer bag- cut tiny hole in corner to drizzle onto cookies.

You can add any of the following: (we like our cookie plain)
1 cup raisins
1 cup chopped nuts

Why do I blog?

I have never been one to keep a journal. I have never been able to write in a diary for more than a week! I have countless scrapbooks that still need to be journaled. I do this in hopes of becoming a better journalist. I do this to document everyday life. I do this so I don't have to scrapbook EVERY picture! I do this for me, our friends and family, & mostly the kids. One day they will have it all - because I took the time to document all the little things that REALLY do matter. Everyday life....all the little moments you & I can't remember because the memories are long gone.......
